Welcome The Hyatt Food and Wine week is a Hyatt initiative in collaboration with Hyatt Hotels Australia to promote good food and wine and the use of fresh local produce and experiencing the finest wines from our region. Local and international chefs are profiled to bring you their culinary style and techniques giving you a first hand experience.

The Melbourne chapter runs from August 22 to August 29, the opening night will be held at Park Hyatt Melbourne on Saturday August 22; a delectable menu with taste of Italy, Asia, best of Australian Seafood and decadent cheese and dessert in radii restaurant. Other events at Park Hyatt Melbourne include an exclusive High Tea experience with Mumm Rose Champagne and Thomas Schnetzler, Maitre Chocolatier, from Lindt Chocolate who will demonstrate how the finest Swiss chocolate is transformed to mouth watering creations. Also on offer are two 5 course dinners with New Zealand chef Al Brown from renown New Zealand restaurant Logan Brown. The final dinner will take place with a book signing on Wednesday August 26. Australian and New Zealand wines will be featured at these events, and at every session you will take with you some trade secrets to experiment with at home.

The delicious program of events at Grand Hyatt Melbourne will run from August 24 to August 29 highlighting the stunning new food and beverage outlets. With a range of events for both foodies and wine connoisseurs, this is a week not to be missed. International guest Chef Lee, Chinese specialist chef from Grand Hyatt Singapore, will create authentic Singaporean and Chinese dishes in the new restaurant, Collins Kitchen for lunch or dinner. Also in Collins Kitchen, the winners of the National Cheese awards available to sample from 27-29 August, along with selected fortified wines.

The residence will host exciting events including a personalized Masterclass with Aaron Carr, Executive Chef, Vasse Felix on 27 August. This intimate class is limited to 18 participants. Over 50 Australian wines will be available to taste and discuss with the winemakers, accompanied by the finest regional produce, at the Australian Made Tasting Event in the residence on 24 August.

RU-CO will host the opening of the Collins Kitchen Wine Room opening from 25-29 August, with a selection of local and international boutique wines available for sampling.

Grand Hyatt Melbourne will close the week with the Five on Five closing Gala dinner in the Savoy Ballroom. Guest chefs George Calombaris, Greg Malouf, Andrew McConnell and Aaron Carr will accompany Collins Kitchen’s own Jason Camillo to craft a five course dinner, matched with five regional wines.
